In Which Fatso Cooks

So I’ve talked about it before (more than once, but for some reason, that’s all that comes up when I search!) , how much I love butternut squash.

Tonight, my parents are away celebrating their 30th wedding anniversary (happy anniversary, parents!) thanks to my big sister, so my little sister and I have been left at home to our own devices.

Last night was horrendous, however. I woke up at about 3am and projectile vomited, went back to bed, unset my alarm and slept until 1.30pm, missed my first spin class since I started…

Luckily, since then, I’ve been fine. I kept down my tomato soup and bread roll, and I’ve kept down my dinner.

Now, if any of you have known me for any amount of time, you’ll know how picky I am about my vegetables. I run hot and cold on the most trivial things, such as potatoes.

But I will pretty much never turn down my favourite dish:

Oven-roasted butternut squash with red onions and garlic.

Now, by “oven-roasted” I mean “caramelised to the point of burnination”. It has to be soft and squishy and black around the edges, or else it’s no good. It has to taste like it’s been coated in sugar although it’s never seen a granule in its life.

So, tonight for dinner, I made myself a lemon, garlic and thyme chicken breast with garlic mushrooms, oven-roasted red onions, butternut squash and garlic.

I must have used about 7 or 8 cloves of garlic.

But it was delicious.

Normally, you’ll be hard-pushed to fill 15% of my plate with vegetables. That there is a plate that is 75% vegetable and 25% protein. I ate all of my protein and then I ate most of my vegetables – what I didn’t eat, I didn’t eat because I had literally eaten until I was full.

(I also had a full 300ml glass of Innocent fruit smoothie, too.)

It was absolutely fabulous.

So that, ladies and gentlemen, is how you get me to eat my vegetables.

 


 

Fingers crossed: I think that I, with some help from Google’s Webmaster Tools help forums, fixed that odd Google thing. FATGIRLslim had apparently been hacked since 19th April, and I never noticed, because I don’t Google my own website.

It should be fixed now. It might take a while for the listings to return to normal, I’ve changed my passwords, etc… so we’ll see.

We’ll see.
